Pumpkin & Dark Chocolate Oatmeal Bites


Today is the first official day of fall, but it's still 90 degrees here in Mississippi! Despite the heat, I have been wanting all the pumpkin lately. But since it still feels like summer outside, I decided to dip my toe into the pumpkin pond with these no bake oatmeal bites.

These are not only tasty, but the pumpkin provides some impressive health benefits. Pumpkins are rich in vitamin A, which promotes healthy vision, proper cell growth, a strong immune system, and works as an antioxidant. One serving (1/2 cup) of canned pumpkin provides more than 200% of the recommended dietary allowance of vitamin A, only 50 calories, and 3 grams of fiber. There are just so many reasons to keep these on hand; they are filling, simple to make, satisfy my sweet tooth, and are nutritious all at the same time. What's not to love?
