Easy Summer Pasta Salad
There are many things that I associate with summer, and this pasta salad is one of them (although I can eat this year round). I love pasta salad, and this version is no exception. My grandmother, a former dietitian, developed this recipe so I’m just here to share her delicious creation. The salad is vinegar and oil based, so it’s light and refreshing for the hot summer months. I like to load this up with veggies, and this is where you can modify for your personal preferences! My faves are tomatoes (lots of tomatoes), broccoli, cucumber, and shredded carrots. But don’t think you are limited to these; red onions, bell peppers, and avocado would also be delicious and add beautiful color.
