Balsamic Roasted Brussels Sprouts



I’m a newbie to the Brussels sprouts world… I know, I know. I recently discovered that I love this cruciferous veggie tossed in some balsamic vinegar and roasted. Simple right?! This recipe in particular is my fave, and is so quick and easy to make.

These Brussels sprouts make a great side dish, and have many benefits. They are saturated fat and cholesterol free, and are very low in sodium. Brussels sprouts are also a good source of dietary fiber and folate, and are high in vitamin C. I find that these keep well in the refrigerator, so you can roast a big batch and reheat throughout the week for a quick veggie option. Hope you enjoy, and I would love to hear your feedback!
