Apple Pie Overnight Oats

Overnight oats are a quick and easy breakfast option, but they pack some serious nutrition. Mornings can be hectic, and more often than not, we end up grabbing a granola bar (that can be packed with added sugars) or running through the fast-food drive thru on the way to work. Not the healthiest options to say the least. Listen, I'm the first to admit that I hang on to every minute of sleep I can, and often "don't have time" to make a nutritious breakfast in the morning. That's where overnight oats come in! Just take an extra ten minutes at night to put together your favorite concoction, pop it in the fridge, and grab before you head out the door the next day. Sounds easy, right?


Now let's talk a little about the nutritional benefits from this particular recipe. Oats contain beta glucan, a type of soluble fiber that helps reduce dietary cholesterol and fat absorption. The AI (adequate intake) for fiber is 25 grams daily for women and 38 grams daily for men up to age 50; most Americans only meet about half of the recommended amount per day. Flaxseed is high in fiber and is a source of omega-3 fatty acids. From the oats, apple, and ground flaxseed, this recipe boasts about 7 grams of fiber, and that's a breakfast that will stick with you for a while. Delicious and nutritious... that sounds like a win-win to me!
